Tips for Checking Chicken Breast Temperature

Pull at 160°F, not 165°F
Chicken breast continues cooking after removal from heat. A breast pulled at 160°F / 71°C rises 5–10°F / 3–6°C during resting, landing at the safe 165°F / 74°C. Waiting until the thermometer reads 165°F means the final temperature is closer to 170–175°F — and that's when breast dries out.

Where to insert the thermometer
Insert an instant-read thermometer horizontally into the thickest part of the breast, keeping the probe in the centre of the meat. Avoid touching bone (for bone-in breasts) or the pan, which gives a false high reading. For stuffed breasts, check the stuffing temperature separately — it needs to reach 165°F / 74°C too.

Pound to even thickness first
Chicken breasts are naturally wedge-shaped — thick on one end, thin on the other. Without evening them out, the thin end overcooks by the time the thick end reaches temperature. Pound or butterfly to an even ¾–1 inch / 2–2.5 cm for consistent results.

Why breast is less forgiving than thighs
Breast meat is almost entirely lean muscle with very little fat or collagen. There's no connective tissue to break down into gelatin at higher temperatures — once the moisture is gone, it's gone. Chicken thighs have a 25°F / 14°C margin between safe and overcooked; breast has only about 5–10°F / 3–6°C.

Rest for 5 minutes before slicing
Resting lets carryover heat finish the cook and allows the muscle fibres to relax, redistributing juices throughout the breast. Cutting too early releases moisture onto the cutting board. Cover loosely with foil to keep warm — tenting tightly traps steam and softens any seared crust.
