How long should I cook chicken breast?
It depends on the method. Bake boneless chicken breast at 400°F / 200°C for 20–25 minutes, grill for 6–8 minutes per side over medium-high heat, or pan-sear for 5–7 minutes per side. Always use a meat thermometer — the internal temperature should reach 165°F / 74°C. Letting it rest for 5 minutes after cooking helps retain juices.
How do I keep chicken breast from drying out?
The most common causes of dry chicken breast are overcooking and uneven thickness. Pound or butterfly breasts to an even thickness before cooking. Brining (even a quick 15-minute salt brine) makes a significant difference. Use a meat thermometer and pull the chicken at 160°F — carryover heat will bring it to 165°F during resting.
Should I use bone-in or boneless chicken breast?
Boneless, skinless is more versatile and cooks faster — ideal for weeknight meals, stir-fries, and salads. Bone-in, skin-on retains more moisture and has better flavour, making it better for roasting and baking when you want crispy skin. Our reviews cover both, but most recipes default to boneless.
What's the best way to season chicken breast?
At minimum, generous salt and pepper on both sides. For more flavour, try garlic powder, paprika, and Italian seasoning — this combination appears in the majority of our top-rated recipes. Marinades with an acid (lemon juice, yoghurt, vinegar) tenderise the meat and add flavour. Season at least 30 minutes before cooking, or overnight for marinades.
Can I cook chicken breast from frozen?
Yes, but it takes about 50% longer. Bake frozen chicken breast at 375°F / 190°C for 30–40 minutes, or use an Instant Pot for 12–15 minutes on high pressure. Pan-searing and grilling from frozen isn't recommended as the outside overcooks before the inside reaches a safe temperature. For best results, thaw overnight in the fridge.
