It depends on the method and cut. Bake bone-in skin-on thighs at 425°F / 220°C for 30–40 minutes, or boneless skinless at 400°F / 200°C for 18–22 minutes. Air fry at 380°F / 195°C for 18–22 minutes (bone-in) or 12–15 minutes (boneless). Always use a meat thermometer — the USDA minimum is 165°F / 74°C, but dark meat is best at 170–190°F / 77–88°C.
What temperature should chicken thighs reach?
The USDA minimum safe temperature is 165°F / 74°C, but unlike chicken breast, dark meat benefits from higher temperatures. At 170–175°F / 77–80°C the connective tissue breaks down for tender meat. Are chicken thighs better than chicken breast?
They're different, not better. Chicken thighs have more fat (about 10g vs 3g per serving), which makes them more flavourful and forgiving — they're much harder to overcook. Chicken breast is leaner with more protein per gram. Thighs are better for braising, roasting, and bold sauces; breast is better for salads, stir-fries, and clean eating.
Should I use bone-in or boneless chicken thighs?
Bone-in skin-on thighs have the best flavour and produce the crispiest skin — ideal for roasting and baking. Boneless skinless thighs cook faster and work better for stir-fries, curries, and meal prep. Bone-in are typically 30–40% cheaper per kilogram. For slow cooker recipes, either works since long cooking breaks down the connective tissue.
How do I get crispy skin on chicken thighs?
Pat the skin completely dry with paper towels. Season the skin with salt at least 30 minutes before cooking (uncovered in the fridge is even better). Start skin-side down in a cold pan and render the fat slowly over medium heat for 8–10 minutes before finishing in a 425°F / 220°C oven. Or bake directly at 425°F / 220°C on a wire rack for 35–40 minutes.
